【班尼迪克蛋 Eggs Benedict】


話說不久之前受網媒Whizoo Media的邀請,教他們兩位地獄廚神做一道菜(好啦!網路紅人就好了!#粉絲不要怒)。於是便即場為他們示範了很多人也很喜歡的班尼迪克蛋(Eggs Benedict)。由於那個不是煮食教學節目,所以當時沒有詳細說明做法,因此現在補回食譜份量供大家參考,讓你們在家中也能做出咖啡店的水準!

其實他們真的已經做得很不錯,只是看我做了一遍,然後要憑記憶才做出來,的確真的不簡單!#掌聲鼓勵 👏🏼👏🏼👏🏼


I am not sure when Eggs Benedict have become a must-have item the menus of breakfast places, but it definitely makes a great breakfast to cheer you up for the rest of the day. I rarely order it in restaurants as I'd prefer making myself at house when I crave for it. Anyway, here's the recipe and I think you should start making your own from now on!

材料 Ingredients:

2 份 / 2 servings

  • 雞蛋 Eggs | 2 隻 pc

  • 水 Water | 1.5 公升 Litre

  • 白醋 White vinegar | 3 tbsp

  • 英式鬆餅 English muffins | 2 片 slices

  • 煙三文魚 Smoked salmon | 4 片 pcs

-- 荷蘭汁 Hollandaise Sauce --

  • 蛋黃 Egg yolks | 2隻 pc

  • 牛油 Butter | 120 克 g

  • 檸檬汁 Lemon juice | 1 湯 tbsp

  • 喼汁 Worcestershire sauce | 1 茶tsp

  • 辣椒仔辣汁 Tabasco | 1/2 茶tsp

  • Salt | 1/2 茶匙 tsp

 

做法 Directions:

  1. 製作荷蘭汁。先把牛油溶掉。放一隻碗放在熱水上,加入蛋黃、喼汁、辣汁和檸檬汁拂打數分鐘。之後慢慢倒入牛油,一邊攪拌一邊拂打,直至達到稠身為止。

  2. 製作水波蛋。把一隻雞蛋打入碗中。在沸水中放入白醋。把鍋離火,再用湯匙在水中攪拌型成漩渦,輕輕在水中倒入雞蛋,讓表面雞白略為煮熟後,再回爐以中小火煮多數分數便可撈起備用。

  3. 同時間把英式鬆餅烘香。

  4. 組合。把牛油果、煙三文魚和水波蛋放在英式鬆餅上。再淋上荷蘭汁便完成。


  1. Make the Hollandaise sauce. Melt the butter first, then place a mixing bowl over a bowl of hot water to create a bain-marie. Add the yolks, Worcestershire sauce, Tabasco and lemon juice in, and beat them for a few minutes until it turns into pale-yellow colour. Then slowly add the butter into the yolk mixture while whisking. Gradually add the butter and keep beating until the Hollandaise sauce has become thick.

  2. Poach the eggs. Crack one egg into a bowl. Add vinegar into boiling water. Remove the pot from heat and use a spoon to swirl the water quickly to create a whirlpool. Gently pour the egg into the centre of the whirlpool. Let the egg white to be cook for a minute before returning the pot over low-medium heat to further cook for another 2-3 minutes. Take out the poached egg and repeat the same step for the other egg.

  3. Slice the avocado and toast the muffins.

  4. Assemble. On a piece of muffin, place the avocado slices, smoked salmon and one poached egg on top, followed with the Hollandaise sauce. Done!
