台式蛋餅 Taiwanese Egg Pancakes

還記得多年前第一次去台北,當地朋友帶我周圍吃喝玩樂。而其中一天的早上,她跟我說帶我去吃蛋餅,當時的我完全不知道什麼是蛋餅,亦完全幻想不到蛋餅是一種怎樣的食物。但當吃了一口之後,我便立刻知道,這道台灣蛋餅已經成為我最愛的早餐之一了!


My Taiwanese friend Nina first introduced me to this egg pancake when I visited Taipei years ago. I have no idea what a Taiwanese "Egg Pancake" would be like before walking into the stall. But just after a bite of it, this dish has become one of my favourite breakfast dishes.

 

材料 Ingredients:

2 份 / 2 servings


-- 海山醬 Sweet Chilli Bean Sauce --

  • 茄汁 Ketchup | 3 茶匙 tsp

  • 醬油膏 Thick soy sauce | 1 茶匙 tsp

  • 砂糖 Sugar | 2 茶匙 tsp

  • 味噌 Miso | 1 茶匙 tsp

  • 太白粉 Potato starch | 1 茶匙 tsp

  • Water | 150 毫升 ml


-- 蛋餅 Egg Pancake --

  • 麵粉 Plain flour | 3 湯匙 tbsp

  • 地瓜粉 Yam flour | 1 湯匙 tbsp

  • 太白粉 Potato starch | 1/2 茶匙 tsp

  • 鹽 Salt | 1/2 茶匙 tsp

  • 雞蛋 Egg | 1/2 + 2 隻 pc

  • 水 Water | 100 毫升 ml

  • 蔥花 Scallion | 1 束 spring

 

做法 Directions:


  1. 先製作海山醬。把100毫升的水和味噌開稀。在鍋中放入茄汁、醬油膏和砂糖,開火煮半分鐘。然後慢慢加入味噌水繼續煮。同時間,把太白粉與剩下的50毫升水混合再慢慢倒入鍋中,煮至略為稠身便可。

  2. 製作粉漿。先把麵粉、地瓜粉、太白粉、水、半隻雞蛋和蔥花拌勻成漿。

  3. 在鍋中放入菜油,加入一半的粉漿去煎,大概 2 分鐘。

  4. 把薄餅翻過來,再慢火煎 2 分鐘後,把薄餅拿出。在鍋中打入一隻雞蛋後,把薄餅放回蓋上,慢火煎30 秒後再翻過來,關火拿出。

  5. 在上面放入你喜歡的配料(芝士、火腿、肉鬆等等),捲起來,切成3-4等分,淋上海山醬便完成。


  1. Make the Sweet Chilli Bean Sauce. First, dissolve miso in 100ml of water. In a saucepan, add the ketchup, thick soy sauce and sugar. Cook it over medium heat until all the sugar dissolves. Then add the miso water in it. Meanwhile, mix the potato starch with the remaining 50ml of water, gradually pour into the pan while stirring the sauce. Cook for another minute until the sauce thickens.

  2. Make the batter for the pancakes. Mix the flour, yam flour, potato starch, water, half an egg and chopped scallion together. Avoid any lumps.

  3. In a frying pan, add some vegetable oil in and turn the heat to medium. When the pan is hot, add half of the batter in and cook for about 2 minutes.

  4. Flip the pancake and cook the other side for 2 minutes as well. Take the pancake out. In the same pan, crack an egg in it, return the pancake and place it over the egg. Do it quickly before the egg is thoroughly cooked. After 30 seconds, flip the pancake again and take it out.

  5. Assemble. Place any fillings you like onto the pancake (ham, cheese... basically anything). Roll it up and cut it into 3-4 pieces. Drizzle some of the Sweet Chilli Bean Sauce on top. Done!
