【🔥水牛城炸雞軟骨 Buffalo Chicken Cartilage🐔】


邊個話水牛城辣汁淨係只可以用嚟配雞翼?千祈唔好俾你嘅思想限制咗你嘅想像~ 有時夜媽媽口痕想搵啲嘢食吓、送吓啤酒,調返轉雞軟骨細細粒好易食、又有口感,仲要準備功夫唔算多,招呼朋友定自己獨自偷歡都一樣咁適合!

材料 Ingredients:


  • 雞軟骨 Chicken cartilage | 400 g

  • 孜然粉 Cumin powder | 1/2 tsp

  • 甜紅椒粉 Paprika | 1/2 tsp

  • 卡宴辣椒粉 Cayenne pepper | 1/4 tsp

  • 芫荽籽粉 Ground coriander | 1/4 tsp

  • 鹽 Salt | 1/4 tsp

  • 自發粉 Self-raising flour | ~100 g

  • 菜油 Vegetable oil | 1 L


- 水牛城乳酪辣汁 Buffalo Yogurt Sauce -

  • 是拉差辣椒醬 Sriracha hot sauce | 1.5 tbsp

  • 牛油 Butter | 1 tbsp

  • 蘋果醋 Apple cider vinegar | 1 tsp

  • 砂糖 Sugar | 1 tsp

  • 蒜粉 Garlic powder | 1/2 tsp

  • 乳酪 Yogurt | 1 tbsp


做法 Directions:


  1. 首先把雞軟骨沖洗乾淨,用廚房紙印乾表面所有水份。把雞軟骨放在一隻碗中,加入孜然粉、甜紅椒粉、卡宴辣椒粉、芫荽籽粉和鹽,拌勻,放在雪櫃醃至少15分鐘。

  2. 製作水牛城乳酪辣汁。在一隻小鍋中,把牛油、是拉差辣椒醬、蘋果醋、蒜粉和砂糖,加熱煮數分鐘,待砂糖完全溶化便可關火。放涼一點之後,加入乳酪拌勻,備用。

  3. 在一隻碗中放入自發粉,把醃好的雞軟骨放進去,讓自發粉均勻地沾在每顆雞軟骨上。同時間,把菜油加熱至180度,便可以把雞軟骨放入油鑊中炸大約3至4分鐘直至金黃色,便可留起瀝油。把炸好的雞軟骨與水牛城乳酪辣汁拌勻後,便可上碟。


  1. First of all, rinse and clean the chicken cartilage thoroughly. Pat dry completely. Place the cartilage in bowl, add cumin powder, paprika, cayenne pepper, ground coriander seed and salt, mix well. Let it marinate in the fridge for at least 15 minutes.

  2. Make buffalo yogurt sauce. In a small pot. add butter, Sriracha hot sauce, apple cider vinegar, garlic powder and sugar in, cook for a few minutes over low heat to melt the sugar completely. Let it cool down for a bit and stir in the yogurt. Mix well.

  3. In a bowl, get the self-raising flour in. Place the chicken cartilage in and coat them completely with the flour. Heat up a pot of oil to 180C, add the cartilage in and deep-fry for about 3-4 minutes until golden brown. Then remove them from the oil and drain any excess oil on a kitchen towel. Transfer the fried cartilage into the buffalo sauce, toss and make sure all cartilage are covered with sauce.


⭐️ 小貼士 Tips:

  • 自發粉有泡打粉成份,可以令到炸衣輕身一點。如果沒有,用正常麵粉和粟粉等材料便可,因為醫肚更加緊要!(If you don't have self-raisng flour, it's alright to just use normal flour or even cornstarch for this dish.)

  • 水牛城辣汁加入乳酪可以令到整體味道和辣味更圓滑~ (Adding yogurt in this buffalo sauce makes the spiciness and sourness rounder.)

  • 沒有蒜粉,可以利用蒜蓉代替~ 不過要多煮數分鐘讓整體味道混合在一起 (If you don't have garlic powder, just use minced garlic. Please make sure to cook the sauce over low heat for extra few minutes to get rid of the garlicky taste.)

  • 如果唔食雞軟骨,其實任何炸物配上呢個水牛城醬汁一樣咁出色!(大家可以試吓水牛城炸燒賣😋🤯)(If you don't like cartilage, just substitute with other ingredients, e.g. siu mai!!!)
