材料 Ingredients:


份量 Portion:18 顆 pieces

  • 低筋麵粉 Cake flour | 100 g

  • 泡打粉 Baking powder | 4 g

  • 小麥胚芽 Wheat germ | 30 g

  • 砂糖 Sugar | 100 g

  • 雞蛋 Eggs | 2 pcs

  • 蜜糖 Honey | 15 g

  • 牛奶 Milk | 30 ml

  • 檸檬青 Lemon zest | 1/2 pc

  • 鹽 Salt | 1/4 tsp

  • 雲呢拿精油 Vanilla extract | 1/2 tsp

  • 牛油溶液 Melted butter | 100 g


做法 Directions:


  1. 首先在一隻碗中,把麵粉、泡打粉、小麥胚芽和砂糖拌勻。

  2. 然後在另一隻碗中,把雞蛋拂勻,再逐少與(1)的材料拌勻。

  3. 再把牛奶、蜜糖、檸檬青、鹽和雲呢拿精油倒入拌勻。最後再逐少加入牛油溶液,拌勻後便可以把蛋糕漿倒入唧袋。放入雪櫃冷藏至少1小時。

  4. 1小時過後,把蛋糕漿唧入貝殼蛋糕模具中,唧至八成滿,便可放入已預熱至200度的焗爐中,焗10至12分鐘。焗好後,立刻拿出來把蛋糕從模具中取出,再放在鐵架上放涼便完成。


  1. First, add sifted flour, baking powder, wheat germ and sugar in a bowl, mix well.

  2. In another small bowl, add the eggs in and lightly whisk them together. Gradually add the eggs into the bowl of (1), and mix everything together.

  3. Then add milk, honey, lemon zest, salt and vanilla oil in and mix well. After that, add the melted butter in and stir until they fully incorporate together. Transfer the mixture into a piping bag and store in the fridge for at least one hour.

  4. After an hour or so, fill the Madeleines mould with the mixture to about 80% full. Then bake them in a pre-heated oven for 10 to 12 minutes. When done, remove the Madeleines from the mould and leave them on a rack to cook down.
